A Rod, Reel, Hook, and a piece of Shrimp or “Gotcha” lure is all you need to catch a variety of fish. Spring fishing is great for Bluefish and King Mackerel, Summer is time for Flounder and Sharks, and Fall is time for Spots, Croakers, and Drum. Offshore fishing is an absolute joy here, as you are not too far from the Gulf Stream. Eat a hearty breakfast and make your way to the Hurricane Fleet out of Calabash. You’ll be catching, Snapper, Grouper, and seabass from the many available headboats or charter your own boat to troll for Kings, Dolphin, Tuna, and Spanish Mackerel.

Be sure to also visit the many Low Country parks and recreation areas. Huntington Beach State Park and Brookgreen Gardens are not to be missed. If you need a day away from the links, this is extremely relaxing and recharging!

Fresh Fall Recipes | Palmetto Vacation Rentals

Here at Palmetto Vacation Rentals we hosted a fall contest during the month of September. Homeowners at each one of our properties sent in delicious recipes that they enjoy making during the autumn season.

Thank you for those that shared your favorite fall recipe…we have included some below for you to enjoy as well! Many of these recipes were adopted from various online outlets – links are below.


Sweet Baby Ray’s Chili

2 tablespoons olive oil
2 pounds ground beef
1 cup chopped Spanish onion
2 teaspoons minced garlic
2 cups bell peppers, diced (red and
green)
2 tablespoons ground cumin
2 tablespoons chili powder
1 tablespoon kosher salt
1 tablespoon black pepper
1 14-oz. can diced tomatoes with
juice
1 cup SBR Original Barbecue
Sauce
1 cup beef broth
1 can black beans, rinsed
1 can red kidney beans, rinsed
1 can white kidney beans, rinsed 
  • Heat oil in a skillet over medium-high heat. Add ground beef and brown. Add onions, garlic, and peppers and saute until onions are translucent.
  • Add salt, pepper, cumin, and chili powder and stir.
  • Add tomatoes, SBR Original BBQ Sauce and beef broth, bring to a boil, reduce heat and simmer for 1 hour. Add beans and adjust seasoning. Garnish with shredded cheddar cheese and scallions.

Homemade Chicken and Dumplings

4 tablespoons butter divided
2 carrots diced small
2 stalks celery plus their
leaves diced
1 onion diced
1 1/4 cup all-purpose flour 
divided
4 cups chicken stock/broth
1 cup whole milk divided
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon fresh thyme leaves or
1/2 teaspoon dried, plus more for garnish
2 cups cooked diced or shredded
chicken
extra salt and pepper
  • Saute the carrots, celery, and onions in 2 tablespoons of the butter in a large pot over medium high heat until browned and soft (about 3 minutes).
  • Add 1/4 cup flour, stir to coat.
  • Add chicken broth (4 cups) and bring to a boil.
  • Turn the heat down to simmer and add 1/2 cup milk and the chicken. Season with salt and pepper.
  • Meanwhile, to make the dumplings, mix together the remaining 1 cup of flour, 1 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon fresh thyme leaves. Stir in the remaining 2 tablespoons of butter, melted, until flour mixture is crumbly looking. Add the remaining 1/2 cup of milk and stir until JUST combined. Do NOT over mix, or your dumplings may be dense.
  • Add spoonfuls of the dumpling mixture to the simmering pot- I recommend using a small cookie scooper (or tablespoon)
  • Cover and simmer on low for 15 minutes, or until dumplings are fluffy, cooked, and float to the top. No peeking!
  • Serve garnished with extra fresh thyme and fresh ground pepper, if desired

Pumpkin Bread (*contains pecans)

3 cups Unbleached All-purpose
Flour
2 teaspoons Baking Soda
1 teaspoon Kosher Salt
1/2 teaspoon Baking
Powder
1-1/2 teaspoon Cinnamon
3/4 teaspoons Ginger
1/2 teaspoon Cloves

1/4 teaspoon Freshly
Grated Nutmeg
1/2 cup Lightly Packed
Light Brown Sugar
2/3 cups Vegetable Oil
3 Eggs
1 cup Canned Pumpkin Puree
1 cup Mashed Ripe Banana
1 cup Chopped Pecans
(optional)
  • Preheat oven to 350ºF. Grease two loaf pans, (8×4 or 9×5).
  • Whisk flour, baking soda, salt, baking powder, and spices together. In another bowl, beat sugars, oil, and eggs until combined. Add pumpkin and banana; mix well. Stir in flour mixture.
  • Fold in pecans. Divide batter evenly between pans.
  • Bake for 45–60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. If the tops are browning more than you’d like, tent with foil towards the end of baking.
  • Cool in pans for 5 minutes. Run a knife around the edge and pop out of pans. Cool on a wire cooling rack.
  • Serve warm or at room temperature. Wrap bread in foil to store.

Apple Pie Cider

1/2 gallon apple cider
1/2 gallon apple juice   
24 packets Sweet ‘N Low
sweetener  
6 cinnamon sticks
Pinch of Nutmeg
*Optional: 1 750 bottle
Captain
Morgan Spiked Rum

  • Stir together apple cider, apple juice, Sweet ‘N Low, cinnamon and nutmeg in a large pot. Bring to a boil; simmer gently for 5 minutes. Remove from heat and let cool completely. Serve with a cinnamon stick in each glass.

(*For the spiked version, add rum to the cooled cider mixture*)R

Friday Finds – Myrtle Beach SkyWheel

This past Thursday, Jason and I had the privilege to ride on the famous 200 feet tall Myrtle Beach SkyWheel centered right on the Myrtle Beach Boulevard & Boardwalk! This iconic attraction came to the area in 2011 and has been a top spot for tourists and locals alike over the past eight years. Sitting in our very own privately enclosed “gondola” that allows for heating and cooling, Jason and I were able to witness firsthand the beautiful views that Myrtle Beach has to offer. While on the SkyWheel, we were able to interview Rachel Beckerman – Myrtle Beach’s SkyWheel Marketing & Brand Manager!


What is the Myrtle Beach SkyWheel known for?

We really are the first of our kind to be on the East Coast! There are other wheels that are larger all around the world, but we are the trendsetters for this type of wheel in this area. We pride ourselves on being a “SkyWheel.” Not a Ferris Wheel, not an Observation Wheel – a SkyWheel. What that means is that we hold ourselves to a higher standard than any other amusement park. We have a brand that we stand by based on safety and outstanding guest service. Every morning our maintenance staff checks every single gondola and goes through many different procedures to ensure that our guests will have a safe and memorable experience on the Myrtle Beach SkyWheel!

What is your favorite part of the job?

Okay, well my favorite part of the job would have to be playing “hooky” and coming out here to work in a mobile office so that I can enjoy the beautiful view. Fortunately, my job encourages me to come out here and get pictures of the view to promote this gorgeous beachfront attraction. You truly do not get such a clear view of the area than in this 200 feet securely enclosed gondola!

What would you tell someone who has already been on the SkyWheel?

We get that question quite often! It is a unique experience every single time you ride. Day of the year – a winter ride is going to be different from a summer ride because of what you are going to see out there! A day ride is going to be completely different from a night ride because during the day you are not going to see the nightlife – the lights and action. Christmas, my gosh to see Myrtle Beach lit up at Christmas is incredible. Halloween is another one that is so fun to see. No matter what time of the year you are coming to Myrtle Beach, the SkyWheel ride experience is going to be different!

What would you tell someone who fears heights?

That is another question we hear quite often – everyone looks at it from the ground and it appears a lot bigger. What I tell people is that once you get up here and see this view, heights do not even matter! You do not even realize you are moving or that you are so high up because you are so captivated by the gorgeous Grand Strand.

The gondolas can fit anywhere from two to six guests! Be sure to check out their social media outlets and website for upcoming specials & fun events. The Myrtle Beach SkyWheel does offer annual passes and VIP packages too. Tickets can be bought online or on location.

Fall in Myrtle Beach is truly a special time. Often overlooked due to the “Summer Vacation” tradition and the excitement of warm weather in the Spring, Fall is a great time to experience the Grand Strand in a more relaxed and comfortable environment.
